Made with grapes from vines planted in 2000 on slate soils.
Hand-harvested in small 15 kg boxes. The harvest is carried out by qualified people who select the best quality grapes on the ground.
Elaboration
The fermentation of the destemmed grapes takes place in stainless steel tanks, most of them with a capacity of 1000 kg, equipped with cooling panels to maintain constant temperatures below 26 ºC.
We macerate for 15 or 20 days before pressing.
The pressing is done manually using an older model press. The extraction rate is less than 60%.

Breeding
Aged for 8 months in used French oak barrels.
Tasting notes
Cherry red in color. Intense and pleasant aromas of red fruits with elegant minerality, notes of cherries in liqueur with light toasting. Ample and concentrated, it displays soft and sweet spicy notes. Pleasant and persistent aftertaste.

Made with grapes from vines planted in 2000 (60%) and old vines from before 1960 (40%) on slate soils. With a yield of no more than 2,000 kg/ha.

Tasting notes
Deep cherry red in color. The nose is complex and harmonious. Red fruits like strawberry, wild berries, and flowers emerge, but after some time, notes of tobacco, slate, and balsamic aromas appear, along with figs and plums, and hints of cream and caramel, alongside cinnamon and licorice. On the palate, it is powerful, extraordinary, and elegant. Sweet, even tannins are perfectly balanced, with a very mineral and fruity character. The finish is smooth and persistent.

MONTSALVAT
90% Cariñena | 10% Garnacha

Made with over 90% Cariñena grapes (the remainder being Garnacha), from vines planted before 1950 on slate soils. Yields do not exceed 700 kg/ha.

Tasting notes
Deep purple in color. Opaque with ruby highlights. The nose is extremely complex. Black and red fruits, such as blackberries and wild berries; very mineral due to the slate soils. Smoke, tar, leather, and slate are also present, along with some balsamic notes, primarily mint. Balanced, elegant, and very structured with incredible depth, leading to a persistent mineral finish. Smooth, expressive, and lingering.

WHITE OF MONTSALVAT
Macabeo | Garnacha Blanca | Moscatel | Trepat Blanco
Vineyard
Made primarily with Macabeu and Garnacha Blanca grapes, and a small amount of Trepat Blanc, a local variety that contributes rustic character and wild aromas. This variety is found scattered throughout the old Cariñena and Garnacha vines and must be carefully harvested separately. Finally, we add a minimal amount of Moscatell to ensure a touch of sweetness.
Production per hectare does not exceed 1500 kg.

Elaboration
We perform a pre-maceration in stainless steel tanks at 8°C for 2 days to extract aromas. After gently pressing the grapes by hand before fermentation, we transfer them to new French oak barrels where they will age for 2 to 3 months, using the bâtonnage method, stirring the lees daily during fermentation with a bamboo cane.

Tasting notes
This exotic wine, with its pale golden hue, boasts intense aromas of minerals, honey, marzipan, and crème brûlée. Dry on the palate with a full body, it may reveal hints of cardamom and clove. The finish is long and pure.
